Tony Bassano, General Manager
Tony Bassano is the General Manager of our Cincinnati restaurant, joining our team in 2007. He came to us with a diverse background in the restaurant and hospitality industry. Tony is a Pennsylvania State University Alumni with a degree in Hotel & Restaurant Management. Tony also takes great pride in his continuing education and has received multiple certifications from the Swiss Hotel Les Serene in culinary management and continues to learn more about food and wine pairings on a daily basis.
Tony’s career in the hospitality field started when he was a child being around his family restaurants. He then worked for Houston’s/Hilltop restaurant group in Atlanta, Houston, and Los Angeles in all areas if the restaurant from the back of the house to the front. Tony successfully owned and operated an upscale family style Italian restaurant in the Cincinnati market for over 10 years. He then sold his share of the company and went to be an Operating Partner for Bonefish Grill in the West Chester, Ohio area which he sold his share prior to joining Eddie Merlots Team in Cincinnati. His entrepreneurial background has complimented and added to our team environment in Cincinnati with his hospitality motto of treat each guests as there are guests in your home.
Tony has three children and a beautiful wife who keep him busy while away from work, but he does occasionally find time to engage in his personal passion of being a professional golfer…Just kidding.
Bryan Hopping, Executive Chef

Bryan’s interest in cooking was sparked at age 10, when his family moved to Germany. After earning a bachelor’s degree in environmental studies and geology at Middlebury College in Vermont, Bryan decided to pursue a culinary career. He brings to Eddie Merlot’s his knowledge of world cuisines from his extensive travels in Europe and Asia. When he’s not in the kitchen, Bryan loves to spend time with his wife and two children.
